A warm, spiced dessert made from day-old whole grain bread soaked in a pumpkin custard.
Bake your own loaf from our whole grain bread mix, or use any firm whole grain loaf that is a day old.
Ingredients:
- 4 cups (about 300 g) cubed day-old whole grain bread, for example from Organic Whole Grain Bread Mix
- 1 cup (240 g) pumpkin puree
- 2 cups (480 ml) milk
- 2 large eggs
- 1/2 cup (100 g) brown sugar
- 1 tsp cinnamon and 1/2 tsp ground ginger
- 1/3 cup (50 g) raisins
- 1 tbsp butter, for the dish
Instructions:
1. Heat the oven to 180 °C (350 °F) and butter a 20 × 20 cm baking dish.
2. Scatter the bread cubes and raisins in the dish.
3. Whisk the pumpkin, milk, eggs, sugar and spices until smooth. Pour over the bread, press down gently and rest for 20 minutes so the bread soaks it up.
4. Bake 40 to 45 minutes, until set in the middle and golden on top. Serve warm.
